Barber lost his mother when he was four, leaving him with a father who did not know how to cook anything. When he was sick with a sore throat, his aunt made him butter on scrambled eggs, and this awakened a passion for cooking. As an adult, he decided to pursue culinary studies, even though he studied other things too.
As for Dan Barber’s childhood, most of it was spent at his grandparents’ farm at Blue Hill, where he came to love the land and all it produced. It was from this experience that he developed an appreciation for farm produce and farmers in the creation of great flavors. From this, he developed a philosophy that every plate at his restaurant had to have a meaning and purpose.
In upstate New York, where he runs his Stone Barns Center, Dan Barber has worked with plant breeders, scientists, and universities to come up with extraordinary flavors for farm produce. He is also the co-founder of the
Row 7 Seed Company, which brings together plant breeders and chefs to come up with new varieties of grains and vegetables.
His
Family Meal at Blue Hill restaurant in New York was awarded 3 stars by
New York Times food critic Frank Bruni, in addition to earning one Michelin star. He has also won several other awards such as the
James Beard Award and the
Chef’s Choice Award, in addition to being named to serve on a committee on food sustainability during the Obama administration.
In 2005, Dan Barber published his debut work,
Provence Harvest, alongside Jacques Chibois and Louisa Jones. In the work, readers are taken on a tour of the countryside of the South of France and the cuisine that resulted from it. The authors provide reminiscences and recipes that show what it is like to live, cook, and eat in the South of France. It explores the products and places that enhance the food from the area and give it a Provencal flavor.
The Third Plate by Dan Barber is a work in which the author showcases a radical new way of thinking about food that tastes good even as it heals the land. Barber believes there is a new form of eating in the future where good food and good farming will work together to make cuisine that is both delicious and sustainable.
