Gina DePalma was a pastry chef. She was a Babbo pastry chef and
Serious Eats contributor.
She became the Pastry Chef of Babbo Restaurant when it opened in 1998 and spent 15 years there. Before that, she was lucky to have worked in some of the best kitchens in New York.
Gina would typically make creamy ricotta cheesecake more than anything else, since it's easy, quick, and delicious. The flavors are straightforward and pure, and after having a big meal it's nice to have something sweet and simple. She'd also make a lot of cookies, since they would go a long way, and nothing makes people happier than a big plate of cookies.
A lot of Italians, including her family, enjoy cheese, nuts, and fruit after having dinner and the all important espresso, and in many cases they don't have dessert after that, however a cookie to dunk is always welcome.
Besides cooking and food, she also loved music, art, history, travel, and design. She never met a potato she didn't like, but her favorite thing to bake is pie. Gina also loved kneading bread, and she bought too much Le Creuset.
She lived at the top of Manhattan, alongside the George Washington Bridge, and she took the A-train.
In 2009, she won the James Beard Award for Best Pastry Chef in America.
Gina died of ovarian cancer at the age of 49 in 2015.
